Pluma with sweet potato cream

By cooking this autumnal vegetable we enhance all its flavor and turn it into an ideal cream to accompany the delicious Batallé el Único‘s Pluma.

Ingredients

    • Pluma Batallé El Único
    • Unsalted butter
    • Onion
    • Sweet potato
    • Broth (flavour to preference)
    • Oil
    • Sal
    • Pepper
    • Herbes de Provence

Elaboration

  • STEP 01: Dice all the vegetables.
  • STEP 02: In a pot, with butter, cook the onion until it begins to caramelize and then add the sweet potato. Add the chosen broth to finish cooking the vegetables.
  • STEP 03: Once fully cooked, with the help of a mixer, grind until you get a creamy and smooth mixture.
  • STEP 04: Season the Pluma and cook it in a pan with a small amount of oil. Once golden, serve together with a touch of sweet potato cream.
