In the pilot project, the technological feasibility of the recovery of the fat fraction rich in unsaturated fatty acids obtained from fractionation processes of the different trimmings that are generated during the cutting of the pig carcass will be studied. The project takes place between July 2021 and June 2023 and they also participate in itTripnet, Matadero frigorífico del Cardoner, Friselva, Eurecat Centre Tecnològic and the cluster Associació Catalana d’Innovació del Sector Carni Porcí “Innovac”.
